Taco Quinoa Bowls

Looking for a delicious, easy, and quick lunch? This is so good and filing with only about 35 carbs! Quinoa is a great sub for rice and has anti-inflammatory properties.

Ingredients
  

  • 1/4 cup Black Beans rinsed
  • 1/4 cup Ancient Harvest Quinoa cooked
  • 1/2 cup Lean Taco Meat
  • 1 Tbls Salsa
  • 1 Cucumber small

Instructions
 

  • Cook 1 cup of quinoa and put in fridge
  • Open 1 can of black beans and rinse. Put in fridge
  • Then all you have to do is measure each into your bow and heat without the cucumber.
