Low-carb Fluffy Chocolate Chip Pancakes

Ingredients
  

  • 1/8 cup Coconut Flour
  • 1/2 cup Almond Flour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tbls Lakanto monkfruit Sweetener
  • 1/4 tsp Real Salt
  • 2 large Eggs
  • 1/8 cup Greek Yogurt
  • 1/4 cup Unsweetened Almond Milk
  • 1/2 tsp Vanilla
  • 1/4 cup Lily Milk Chocolate Chips
  • 2 tbls Kerrygold Real Butter

Instructions
 

  • Place butter on griddle and heat. Mix all dry ingredients together. Add in all the wet ingredients and mix well. Let sit for a few minutes to thicken.
  • Pour each pancake onto hot griddle. Wait for pancakes to slightly bubble, pancake will be flimsy so it might take 2 spatulas to flip over. Be careful not to let them sit too long or they will burn easily.

Notes

Top with Sugar free Pancake syrup, berries and a side of bacon or
sausage.
