Place butter on griddle and heat. Mix all dry ingredients together. Add in all the wet ingredients and mix well. Let sit for a few minutes to thicken.
Pour each pancake onto hot griddle. Wait for pancakes to slightly bubble, pancake will be flimsy so it might take 2 spatulas to flip over. Be careful not to let them sit too long or they will burn easily.

Top with Sugar free Pancake syrup, berries and a side of bacon or sausage.
