KETO Glazed Lemon Blueberry Loaf

Ingredients
  

  • 3/4 cup THM Baking Blend
  • 2 TBSP Almond Flour
  • 1 EGG
  • 2/3 cup Egg Whites
  • 7 TBSP Greek Yogurt
  • 4 TBSP No Sugar Added Applesauce
  • 1 TBSP Baking Powder
  • 1/4 tsp Redmond’s Real Salt
  • 1/2 cup Lakanto Monkfruit
  • 1/2 tsp Butter Extract
  • 1 1/2 tsp Lemon Extract
  • 1 cup Fresh Blueberries
  • Natural Yellow food Coloring optional

Glaze

  • 2 wedges Light Laughing Cow Cheese original flavor
  • 1/2 tsp Vanilla
  • 2 tsp Lakanto Monkfruit Confectioner Sweetener
  • 2 TBSP Almond Milk

Instructions
 

  •  Preheat oven 350 degrees. Use parchment paper to line aLoaf size pan and spray sides with cooking spray.
  • Combine all dry ingredients together and mix. Add all the wet ingredients (except blueberries) and mix with a mixer on medium speed for approx. 2-3 minutes. Gently stir in the blueberries. Pour into prepared pan.
  • Bake approx. 30-40 minutes until center is done. Test with a toothpick to make sure its done. Let cool on a wire rack for 10-15 min and top with glaze. (I blend this with my ninja blender to get all the lumps out.
