KETO Glazed Lemon Blueberry Loaf
A delicious Low Carb treat!
Ingredients
- 3/4 cup THM Baking Blend
- 2 TBSP Almond Flour
- 1 EGG
- 2/3 cup Egg Whites
- 7 TBSP Greek Yogurt
- 4 TBSP No Sugar Added Applesauce
- 1 TBSP Baking Powder
- 1/4 tsp Redmond’s Real Salt
- 1/2 cup Lakanto Monkfruit
- 1/2 tsp Butter Extract
- 1 1/2 tsp Lemon Extract
- 1 cup Fresh Blueberries
- Natural Yellow food Coloring optional
Glaze
- 2 wedges Light Laughing Cow Cheese original flavor
- 1/2 tsp Vanilla
- 2 tsp Lakanto Monkfruit Confectioner Sweetener
- 2 TBSP Almond Milk
Instructions
- Preheat oven 350 degrees. Use parchment paper to line aLoaf size pan and spray sides with cooking spray.
- Combine all dry ingredients together and mix. Add all the wet ingredients (except blueberries) and mix with a mixer on medium speed for approx. 2-3 minutes. Gently stir in the blueberries. Pour into prepared pan.
- Bake approx. 30-40 minutes until center is done. Test with a toothpick to make sure its done. Let cool on a wire rack for 10-15 min and top with glaze. (I blend this with my ninja blender to get all the lumps out.
